Frying a turkey? Safety and Helpful Hints!

  1. Use turkey fryers outdoors a safe distance from buildings and any other combustible materials.
  2. Never use turkey fryers in a garage or on a wooden deck.
  3. Make sure fryers are used on a flat surface to reduce accidental tipping.
  4. Never leave the fryer unattended. If you do not watch the fryer carefully, the oil will continue to heat until it catches fire.
  5. Never let children or pets near the fryer, even if it is not in use. The oil inside the cooking pot can remain dangerously hot hours after use.
  6. To avoid oil spillover, do not overfill the fryer.
  7. Use well-insulated potholders or oven mitts when touching pot or lid handles. If possible, wear safety goggles to protect your eyes from oil splatter.
  8. Make sure the turkey is completely thawed, and be careful with marinades. Oil and water do not mix; water causes oil to spill over, causing a fire or even [becoming] an explosion hazard.
  9. Keep an all-purpose fire extinguisher nearby. Never use water to extinguish a grease fire. If the fire is manageable, use your all-purpose fire extinguisher. If the fire increases, immediately call the fire department for help.

Countdown to Thanksgiving: A To-Do-List to simplify your life this week

  • ONE WEEKEND AHEAD Saturday / Sunday
  • Go through your assorted flatware, glassware, serving pieces, and table linens to see what you need to dry-clean, press, or shine, and what you will need to buy.
  • Bake any breads or rolls now-they will keep for a week in the freezer. After baking, allow them to cool completely, wrap in foil, place in resealable plastic bags and freeze.
  • It’s time to clean out the fridge. You’ll need storage space in the freezer and fridge for the turkey and the do-ahead dishes.
  • THREE DAYS AHEAD – Monday
  • Make cranberry sauce or relishes and store in the refrigerator.
  • If you’ve gone the frozen turkey route, calculate the defrosting time-you might have to start today.
  • If you didn’t already make and freeze turkey stock, do so today.
  • If you’ll be serving ice cream with dessert, scoop it now, arrange on a baking sheet and place in freezer until frozen hard. Transfer ice cream balls to a resealable plastic bag and freeze until needed.
  • TWO DAYS AHEAD – Tuesday
  • Thaw frozen pie crusts in the fridge.
  • Prepare salad dressings and store in the refrigerator.
  • Polish your silver and set and decorate your dinner table, if possible.
  • ONE DAY AHEAD – Wednesday
  • Hit the supermarket early in the day to shop for perishables.
  • Parboil vegetables such as celery root, rutabagas, carrots and onions in generously salted water. When cool, drain and pat with paper towels. Wrap in dry paper towels and store in a covered container in the fridge.
  • Wash and spin-dry salad greens, wrap in paper towels and store in resealable plastic bags in the refrigerator.
  • Make pies or other desserts and store according to recipe directions.
  • Most important of all: don’t cook dinner tonight. Order in.
  • THANKSGIVING DAY- Thursday    
  • Make mashed potatoes
  • Finish preparing any vegetables
  • Complete stuffing and put the turkey in to roast
  • Thaw and rewarm breads
  • Whip cream for dessert
  • THE DAY AFTER – Friday
  • Enjoy your leftovers

Did you have any drama during the Thanksgiving Holiday? Maybe you had some, if so you were not alone. Michelle and I did, so did Larry and Melinda. Was it a missing or forgotten ingredient? Was it a broken part?

Maybe it was a broken fryer for the Cajun fried turkey…. So when you brave the crowds and buy a new one and then get back home, it has a broken part. Which meant another trip to town. Then a return trip home… Oh did I mention it’s 10pm now and I haven’t even started cooking. But, I’ll outfox this situation, I bought two… one of these will work.

Meanwhile, trying to get a turkey to our friends to fry but they were delayed … (see above) then, trying to find ONE elusive ingredient for Michelle’s famous spice cake … and while we are driving around searching “wondering if anyone else was experiencing something similar… (back to the story) several … several … several stores later … success!

Tips for Preparing the Perfect Stress-Free Thanksgiving :The 10 Most Common Thanksgiving Cooking Mistakes (ABC News)

  1. Trying to cook too much at the last minute.
  2. Planning a menu composed of either all baked items or all stove-top items.
  3. Overcooking the turkey — it should be taken out when the leg thigh joint registers 165 F.
  4. Not letting the bird rest for at least 20 minutes, or preferably 30 minutes. If the bird is carved right after coming out of the oven all the juices will come streaming out and you will have a dry bird.
  5. Opening the oven door too much when cooking the bird. If you’re going to baste the bird on a regular basis, take it out of the oven quickly and close the oven door. Baste it and then return it to the oven quickly (get a partner to open and close the door). The constant opening and closing of the door reduces the oven temperature significantly and will extend the turkey cooking time.
  6. Not removing the wishbone before carving. You can’t carve the white meat off properly and neatly if the wishbone is still in.
  7. Over-processing the mashed potatoes. High starch potatoes also known as baking potatoes or russets will get very gluey if you mash them too much. And whatever you do, do not puree them in the food processor; you will break it.
  8. Serving hot food cold. Have some hot stock  available to pour over the sliced turkey before serving and make sure all the other dishes are properly heated.
  9. Serving too much food before the actual meal. Keep the hors d’oeuvres on the light side and don’t serve too many. A cheese platter before the meal is a deadly idea.
  10. Leaving the food out for hours after the big meal. That is a bacterial nightmare. Prepared food should stay out at room temperature for no longer than two hours tops.

Keep Your House And Family Safe: Space Heater Safety – Space heaters are a great way to warm up a cold room or provide some supplemental heat to your house. However, while undoubtedly convenient, a space heater can also be dangerous. In fact according to the National Fire Prevention Association (NFPA), supplemental heating equipment such as electrical and kerosene heaters are the leading cause of home fires during the months of December, January and February. So if you’re thinking about getting a space heater or you already have one, keep these ideas in mind and make sure you that extra warmth safely. As well, as part of an overall home fire safety plan, not just because you have a space heater, be sure to equip your home with at least one smoke detector and alarm on each floor and outside all sleeping areas.   • Whatever type of space heater you decide to buy (electric, kerosene, propane) be sure it is certified and approved by a national testing laboratory such as Underwriters laboratory and has the UL symbol on it.
  • Ensure the model you choose has a “tip switch” that will shut it off if it is knocked over or falls.
  • Keep in mind that space heaters are designed to provide small amounts of warm air. They aren’t bed warmers, cookers or clothes dryers, so never try to use them for anything other than helping warm a room.
  • A space heater should never be placed closer than 3 feet to any curtains, bedding or furniture.
  • Never leave a space heater unattended. Turn it off when you’re leaving a room or going to sleep, and don’t let pets or children play too close to a space heater.
  • Ensure there is a guard around the heating element or flame area, so little fingers can’t get burned.
  • Make sure you put your heater only on a hard, level non-flammable surface. Never on carpets or a rug that could catch fire.
